MAD RIVER VALLEY

Localvore Project

Celebrating and supporting local food in the Mad River Valley - those who eat it and those who grow it - through education, community connections, and collective wisdom.

Those who say it can't be done should not interrupt those who are doing it.

John Dromgoole

Local Eggs!

Mad River Valley Localvore ProejctThe ladies at the Knoll Farm on Bragg Hill Road and the Mountain Valley Farm on Common Road have been working overtime to produce fresh eggs for the Mad River Valley. Both farms stepped up their production to meet Localvore demands and are now flush with eggs. Prices range from $3 to $3.50 a dozen.

Eggs are a naturally nutrient-dense food, which means they have a high proportion of nutrients to calories. One large egg has only 72 calories and provides 13 essential nutrients in varying amounts. Eggs are an excellent source of choline and a good source of protein and riboflavin. Even in the winter, the Knoll Farm and Mountain Valley Farm eggs have beautiful deep golden yolks indicative of the rich diets the chickens are eating.

An eggcellent source of nutrition for all ages, eggs provide kids the nutrient building blocks they need to grow and the energy they need to stay focused throughout the day. They help adults build and preserve muscle strength and allows them to feel full longer and stay energized, which contributes to maintaining a healthy weight. And, for older adults who are at risk for sarcopenia, the age-related loss of muscle mass, eggs provide the highest quality protein, available to help them meet their protein needs in order to help maintain muscle function and slow the rate of muscle loss.

Mad River Valley Localvore ProejctIt is no wonder that local farm fresh eggs are a true Localvore bargain at less than 30 cents a piece. Our Localvore Recipe Database has over 50 recipes that use eggs - many are for main dishes and include quiches, flans, souffles, fritattas, and custards. Click here for the recipes.
