Salsa Making Social  Thursday, August 23, 2007 1pm to 3pm.  Hosted by Penny Percival and Nancy Baron. Participants will learn how to make and put up (water bath can) a delicious salsa using local tomatoes, onions, and peppers. This salsa is far superior to anything found on the supermarket shelf. Imagine hosting a Super Bowl party in the dead of winter and treating guests to homemade salsa with flavors from this summer! There is a $10 material fee (to cover jars and ingredients) payable at the class and each participant will take home 2 jars of salsa. The social will be held at Nancy's home in Warren on Thursday, August 23, 2007 1pm to 3pm. Class size is limited; advance registration is required. Directions will be provided upon registration.

Elderberry Jelly Social Wednesday, August 29, 2007 5pm to 8pm Kate Stephenson will lead participants through the process of making Elderberry Jelly from picking to cooking to water bath canning. Participants will each take home a jar of homemade Elderberry Jelly and the knowledge and skills to make it at home on their own. There is a $5 material charge for the social payable at the workshop. The social will be held at Yestermorrow on Wednesday, August 29, 2007 5pm to 8pm. Class size is limited; advance registration is required.

Gathering and Gardening for Your Immune System with Dorothy Tod Wednesday, September 5, 2007 1pm to 3pm  Now is the time to be thinking about health for this coming winter. In this workshop participants will learn about gathering the season's bounty for winter health--elderberries, hawthorns-- and also cleaning up the garden edible and healthful weeds--dandelions, burdock, yellow dock. This workshop will also explore how the immune system works and what helps when an ailment strikes. Methods of herbal preparation include vinegars, honey, alcohol and drying. The workshop will be held at Dorothy's home in Warren on Wednesday, September 5, 2007 1pm to 3pm. Class size is limited; advance registration is required. Directions will be provided upon registration.

Preserving Tomatoes for the Winter Workshop Wednesday, September 5, 2007 5pm to 7pm  Learn a variety of ways to preserve tomatoes for the winter including canning (water bath), roasting, freezing, and drying. Early September is the perfect time to be thinking about putting up some tomatoes since gardens are exploding with them and farmers will have lots of seconds they will want to get rid of. Chef Jason Gulisano of the Green Cup will lead this workshop sharing with us techniques he has used for years to preserve tomatoes for use in restaurants and at home. There is a $10 material charge for the workshop payable at the event; participants will take home a quart of tomato sauce. The workshop will be held at the Green Cup Cafe in Waitsfield on Wednesday, September 5, 2007 5pm to 7pm. Class size is limited; advance registration is required.

Sauerkraut and Kimchi Social Wednesday, September 19, 2007 1pm to 3pm After being introduced to kimchi last year, Nancy Baron and Robin McDermott made a huge batch to carry them through the winter. Now they want to share what they learned with other Localvores. This is a hands-on social where participants will bring in a variety of vegetables and will take home a quart of Kimchi and a quart of Sauerkraut made from those ingredients. There is a $12 material fee for the workshop which covers the cost of the vegetables.  Please bring 2 CLEAN 1 Quart jars with you.  You will take these home filled with sauerkraut and kimchi.  The workshop will be held at Robin's home in Waitsfield on Wednesday, September 19, 2007 1pm to 3pm. Space is limited so advance registration is required.

Applesauce and End of the Season Vegetable Pickles Workshop Sunday, September 23, 2007 2pm to 4pm Callie McAllister, who is known in the Valley for her amazing pickles and dilly beans will be conducting a workshop on end of the season canning. Participants will learn how to make and can (water bath) applesauce and will also learn how to take abundant end of season vegetables and turn them into pickles to enjoy throughout the coming winter. There is a $10 material charge for the workshop; participants will take home a jar of applesauce and a jar of pickles. The workshop will be held at the Warren Town Hall on Sunday, September 23, 2007 2pm to 4pm. Class size is limited; advance registration is required.

Grass-Fed Lamb: What it is, how to grown your own Monday, September 24 4pm to 6pm  Are you wondering what makes grass-fed meat healthier for the land and for you? Or have you entertained the idea of raising a couple of sheep to mow your open land and provide you with healthy winter food? Helen Whybrow and Peter Forbes of Knoll Farm will explain the benefits of eating and raising grass-fed meat, demonstrate their own methods of raising lambs for market, and also talk about the heritage breed of Icelandic sheep and how to raise your own without a barn.  Register in advance by calling:  496-5690
