What Will I eat and How Will I Make it?
Wondering what you'll eat during the Localvore
Winter Challenge? While the Winter Challenge is a
bit tricker than the summer challenge, it's not as
hard as you think... here are a few (actually lots
and lots of) tasty recipes you can make with foods
available in the middle of winter. And, if you're
lucky, you have a few vegetables or berries in your
freezer, maybe some kimchi or pickles in the fridge
to spice things up a little!

Sample January Localvore Menu
Breakfasts:
Breakfast Quick Bread
Waffles with Berry Sauce
Scones and eggs
Trukenbrod toast and cider jelly
Wheatberries, yogurt and honey
Lunches:
Soup, cornbread, apple and cheese plate
Local potato salad, omelet, winter slaw or dilly beans
Wholewheat crackers and cheese, chili
Red cabbage with blue cheese dressing, local bread &
lunchmeat
Dinners:
Tortillas with beans, meat, roasted garlic, cheese,
sprouts & salsa
Steak, mashed potatoes, canned green beans, maple-glaze
carrots
Crepes filled with curried winter squash stir fry, baked
ricotta, kale
Sausage, sauerkraut, hash browns, baked beans
Shepherd’s pie
Desserts:
Pumpkin custard
Baked apple crisp
Maple spice cake
Strafford organic maple ice cream
Maple candies
